The brake sensors (wheel rotation sensors) can be easily disabled by running all the sensors off the same wheel. The easiest is the back wheel since it already had 2 of the 4 sensors on it. This is what you do if you want to dyno the bike. Though what you are disabling is ABS, traction control, and the Vehicle Stability System VSS all at the same time. This does not however disable the accelerometer which will still provide input to the VSS resulting in application of the brakes to various wheels in various situations....usually at the most inopportune time. I know of no one that has disabled the accelerometer without simultaneously totally disabling the bike.
That said, the all sensors on one wheel has been done and tested in a dry flat parking lot. The opinion was that the bike was scarry crazy and the owner eventually wrecked by flipping the bike.
